Ingredients

2 tablespoons creamy peanut butter

2 tablespoons Asian chile-garlic paste or sambal oelek

1 tablespoon plus 1 1/2 teaspoons soy sauce or tamari

1 tablespoon plus 1 1/2 teaspoons freshly squeezed lime juice (1 medium lime)

3 cloves garlic, minced

2 medium English cucumbers (about 12 ounces each), sliced crosswise into 1/4-inch thick rounds

1/2 cup coarsely chopped fresh cilantro (about 1/2 small bunch)

1/2 cup coarsely chopped salted, roasted peanuts

Red pepper flakes, for garnish (optional)


Instructions

  1. Step: Whisk 2 tablespoons creamy peanut butter, 2 tablespoons Asian chile-garlic paste, 1 tablespoon plus 1 1/2 teaspoons soy sauce, 1 tablespoon plus 1 1/2 teaspoons lime juice, 3 minced garlic cloves, and 1 teaspoon red pepper flakes if using together in a large bowl. The dressing will be on the thicker side.
  2. Step: Add 2 sliced medium English cucumbers, 1/2 cup coarsely chopped fresh cilantro, and 1/2 cup coarsely chopped salted, roasted peanuts.
